At Thailand's best Michelin restaurants, the meal isn't the hard part — getting the table is. This guide walks you through exactly how each booking system works, from Sorn's once-a-month drop to Sühring's rolling 60-day window to the street-food legends where you simply show up and queue. By the end you'll know which alarm to set and how early to arrive at the door.
TableCheck: the once-a-month drops worth an alarm
Many of Bangkok's hardest tables live on TableCheck, and the legend of the monthly drop is Sorn, the three-star Southern room with only about 22 seats. Reservations open at 12:00 noon Bangkok time on the 25th of each month for the following month (the 24th if the 25th falls on a Saturday). International guests can instead email reservation@sornfinesouthern.com from midnight Bangkok time on the 15th. You prepay in full, there are zero refunds, and you must arrive within 30 minutes of your slot or lose the table.
Other TableCheck rooms are far gentler. Chef's Table at lebua usually shows availability days to weeks out rather than months. Nusara is 100% prepaid and takes no walk-ins, while Mezzaluna requires a deposit. Guard Sorn's release time closely; the rest you can book with a lot less stress.
SevenRooms: the rolling booking windows
The other system the popular stars lean on is SevenRooms, which opens a fixed number of days ahead on a rolling basis. The headliner is Sühring, the three-star that opens bookings up to 60 days in advance on its official site. Since the third star, weekend tables vanish within minutes, so click the moment the 60-day window opens — or take the easier route of a Thursday-to-Sunday lunch.
Gaggan also books through SevenRooms on gaggan.com, prepaid in full, with just 14 seats per seating and no walk-ins ever. Aksorn is easier to get than most Bangkok stars, though weekend slots still go first. On a budget, the lunch 'Escale' set at Blue by Alain Ducasse and lunch at Igniv are the cheaper, easier-to-book way in.
Chope, Hungry Hub and LINE bookings
Several small counters run on Chope, which shows live availability. Avant is a roughly 10-seat counter, so reserve weeks ahead. Potong books through Chope on its official site and fills fast since reopening. For a deal, Elements can be booked via the hotel's TableCheck, Chope, or a discounted Hungry Hub package.
Many Bib Gourmand spots take bookings only by LINE or phone. Krua Jay Sim, for example, takes reservations at 08-1351-4569, is cash only, and has no online system. When a phone booking is possible at places like these, it's worth making — it saves you a wasted trip.
Walk-in spots: how early to arrive
Jay Fai is the toughest of the queue-it-yourself crowd. There's a Chope waitlist up to two months out, but it's mainly walk-in: sign up 30 to 60 minutes before opening, or come around 3pm when the line thins. At peak you can wait anywhere from one to five hours. The 80-year-old Jay Fai woks every dish herself, one pan at a time, so food comes out slowly — order everything at once since it all arrives together, and bring cash.
Plenty of Bib street stalls are walk-in and cash only. Rung Rueang Tung draws lines at the 11:30–13:30 lunch rush, so go at breakfast or mid-afternoon, and don't confuse it with the near-identical rival next door. Ten Suns sells out of prime cuts like cheek and tongue before closing, so arrive before noon for full choice. At Somsak Pu Ob, waits of an hour or more are normal; come before the pots fire up around 15:30–16:00.
Dress codes and deposits you can't ignore
The trap that catches people isn't the booking — it's the dress code. Chef's Table and Mezzaluna atop State Tower require men to wear collared shirts and long trousers; no T-shirts, sleeveless tops, shorts, or caps, or you risk being turned away at the Tower Club. Sorn and Sühring run smart, while Nusara is smart casual with just no flip-flops or tank tops.
Money matters just as much. Sorn charges in full up front with no refunds; Gaggan and Nusara are fully prepaid; Mezzaluna takes a deposit. Book, then show up on time — these rooms have few seats and don't give the money back.
