Michelin unveils a fresh Thailand list near the end of each year, and the 2026 edition was announced back in 2025. That pattern puts the 2027 edition around November or December 2026. This page walks you through what's realistic to expect, how the tiers work, and what actually changed last time, using only the real numbers.

When the next guide is announced
Michelin rolls out a new Thailand edition late each year. The one badged "2026" was actually revealed in late 2025, so on the same rhythm the "2027" edition should land around November or December 2026.
There's no official date yet, and no 2027 restaurant list exists. If you want to book a starred table early, watch the late-year window closely, since the popular rooms fill fast once the list drops.
How the tiers work: stars, Bib, Green, Selected
Michelin stars reward cooking alone. One star means a very good restaurant in its category, two stars means worth a detour, and three stars means worth a special journey just for that meal.
Bib Gourmand flags great food at a friendly price. The Green Star goes to kitchens serious about sustainability, from sourcing to their environmental footprint. Selected restaurants are inspector-recommended spots that haven't earned a star or Bib. All of them live in the same guide.
What changed from 2025 to 2026
The headline of the 2026 edition was Sorn becoming the first Thai restaurant to reach three stars. That brings Thailand to two three-star tables, the other being Sühring.
Across the 2026 edition there are 2 three-star, 8 two-star, and 33 one-star restaurants, while the value-focused Bib Gourmand list grew to 137 spots. That growth says Michelin is leaning into affordable, everyday eating, not just fine dining.
What to watch for 2027
Based on the recent direction, two things are worth tracking: expansion into new provinces beyond the established cities, and the number of Green Stars, which sat at 5 in the 2026 edition and could climb as sustainability stays front of mind.
Which restaurants gain or shift stars in 2027 is genuinely unknown until announcement day. We'll update this page the moment Michelin reveals the new edition.
